Grilled Pineapple Recipe

Every summer, we add new recipes to our list of ‘things we can barbecue’, and thanks to last weekend’s success, I can add this Grilled Pineapple recipe as well.

This Grilled Pineapple recipe tastes like a piña colada and is lick-the-plate-good!
I’ve been playing around with flavoured balsamic vinegars and olive oils and this dessert turned into a piña colada-type treat. We served it up with ice cream and it was lick-the-plate-good.

Grilled Pineapple
I imagine this is what a piña colada would taste like if you could barbecue it.

Ingredients
  1. Pineapple, peeled and cut into circular slices 1/2 to 1" thick
  2. 1 tbsp coconut balsamic vinegar
  3. 2.5 tsp lime olive oil
  4. Sprinkle sweetened coconut (optional)
Instructions
  1. Remove the outside of the pineapple and cut pineapple into 1/2' - 1' circular slices and place evenly in a seal-able plastic container.
  2. Mix coconut balsamic vinegar and lime olive oil together and pour over pineapple.
  3. Sprinkle coconut over pineapple (optional).
  4. Seal container and refrigerate for one hour.
  5. Heat barbecue to medium-high heat.
  6. Place your pineapple slices on the grill for 2 - 3 minutes on each side and flip once they get a good grill mark on them.
  7. Remove and serve alone or with ice cream.

    This looks very tasty, that is one thing I have never done, and that is to grill pineapple, I’m going to have to try it out, looks so good!!!

      Thanks Lynda. Grilling it makes it really sweet. It’s very good with ice cream.
