Sobeys Summer Grilling: Glazed Mochachino Ice Cream Cake

As promised in my last post about Sobeys Summer Grilling, I wanted to share how the second recipe I chose worked out. In a nutshell, YUMMY!

So as you know, Sobeys has offered up some great recipes for grilling season and I chose two recipes. The second recipe I chose was the Glazed Mochachino Ice Cream Cake and I chose it for two reasons.

  1. I just spent $65 on an ice cream cake from an ice cream store and to think that I could make it on my own for a fraction of the cost is fantastic!
  2. We don’t keep a lot of junk food treats around the house so this was a score for everyone who got to try it and its summer – time for ice cream!

I need to start by saying that I changed the recipe up a bit. I omitted the almonds and replaced the Mochachino Almond Fudge Ice Cream with the Sensations by Compliments Butterscotch Ice cream. Those little bits pose a choking hazzard for Baby Bird since she is still quite little. And when she eats ice cream, like her mother, she inhales it! So better to be safe and get rid of the little bits. I also went a little light on the fudge topping.

The instructions are really easy to follow and I have never used a spring-form pan before. It’s the coolest thing. I put the cake together as per the instructions (and I ate some too — shh! our secret), and I froze it. When it was time to eat, I took it out, popped open the pan and voila! Masterpiece!

In general, I can’t believe how easy it was to make. It’s perfect for a summer get together and makes a great dessert served up on a hot day after a big barbecue. We had my parents over for dinner and I served this for dessert. My mom said “Wow, you made this?”. It was that good!

The crust was also really easy to make and was a perfect compliment to the ice cream cake. Next time I think I am going to experiment even further and use ground peanut butter cookies instead of chocolate chip cookies. The choices with this ice cream cake are endless when it comes to both the crust and the ice cream choices. That’s what makes this recipe so fun and versatile. This will definitely be made again.
