Quick and Simple Summer Salads #LMDConnector

In the spring, summer and fall months, we barbecue almost every weekend. We barbecue so much that we have two propane tanks on hand at all times so we will never accidentally run out.

Since I love recipes that are easy, and I hate turning on our stove during the summer months, I want to share with you a few of our ‘go to’ salads that are the perfect side to any barbecue recipes you will be cooking up. These recipes are also lower in calories as they don’t come with fatty dressings.

Easy Summer Salad
Combine one sliced cucumber, one diced orange pepper and one diced mango together and enjoy. Seriously, that is it. Our girls (and my husband and I) love it.

Cucumber and Onion Salad
Slice one cucumber and dice 1/2 an onion and mix in a bowl. Add a couple of tablespoons of white vinegar (more if you like vinegar). Add some dill and salt to taste and mix it all together. Let it sit for about 30 minutes while you are barbecuing. Again, easy-peasy.
