In the summer months, our family takes the cooking outside for about 80% of our meals. This year, we bought a charcoal grill and since the first moment it was fired up, my husband has been inspired to kick his grilling up a notch.
Wait, what’s bigger than a notch? A chunk?
We have gone from grilling burgers and hot dogs to a four-pound brisket. He spent hours online researching different methods and recipes for a brisket that would make an impression.
Have you ever been working out in your yard, only to smell an amazing BBQ smell somewhere nearby and in that moment, you wished you were eating there for dinner?
That was our yard that day.
It cooked on the grill for over five hours and when it was done, it was better than anything I have ever tasted at a fair or exhibition.
Just this weekend, he cooked a whole chicken. Four hours, low and slow, on the grill. We thought we’d have leftovers for the next day. Ha!
The next gourmet grill meal is going to be ribs. I’m going to exercise every day this week just so I don’t feel guilty when I devour my meal, then look at my daughters and say “Are you going to finish that?”, because that is what’s going to happen.
I am always looking for new side dishes to go along with my husband’s grilling masterpieces. Thankfully, the Life Made Delicious website has a library of easy recipes such as Dilled Potato-Bean Salad, Sweet Potato Hummus, Healthified Greek Layaered Dip, and Smoky Cheddar Potatoes.
